{"id":2008,"date":"2018-07-05T07:00:37","date_gmt":"2018-07-05T13:00:37","guid":{"rendered":"http:\/\/mrmaresca.com\/wp\/?p=2008"},"modified":"2018-07-04T19:00:48","modified_gmt":"2018-07-05T01:00:48","slug":"dishes-to-bring-to-the-party","status":"publish","type":"post","link":"https:\/\/mrmaresca.com\/wp\/dishes-to-bring-to-the-party\/","title":{"rendered":"Dishes to Bring to the Party"},"content":{"rendered":"<p>This week at <a href=\"https:\/\/sffseven.blogspot.com\/\">SFFSeven<\/a>, we&#8217;re talking about things to bring to a party.\u00a0 As it happens, I&#8217;m going to one tonight, for Austin SFF Writer <a href=\"https:\/\/www.amazon.com\/default\/e\/B003BX0F3U?redirectedFromKindleDbs=true\">Amanda Downum<\/a>.\u00a0 So, what am I bringing?\u00a0 I&#8217;m making a <em>cochinita pibil<\/em>.\u00a0 It&#8217;s a slow cooked pork in an achiote marinade.\u00a0 It&#8217;s SO good.<\/p>\n<p>Here&#8217;s how you make the achiote marinade:<\/p>\n<p style=\"padding-left: 30px;\">achiote paste<br \/>\n8 cloves of garlic, chopped<br \/>\n1 cup of white vinegar<br \/>\n1 cup of orange juice<br \/>\n\u00bc cup of water<br \/>\nall spice (8 to 10 balls)<br \/>\nblack pepper to taste<br \/>\npinch of cumin<\/p>\n<p>Blend all that into a thick marinade.\u00a0 Marinate pork, cut into one-inch chunks, with that good stuff overnight.\u00a0 Then slow cook it in a low temperature (the hardcore way is to wrap it in banana leaves), or in a sous vide.\u00a0 \u00a0 Meanwhile, also make pickled purple onions:<\/p>\n<p style=\"padding-left: 30px;\">3 purple onions<br \/>\nvinegar<br \/>\nSalt<br \/>\nPepper<\/p>\n<p>Put a pot of water to boil. Slice the onions into thin slices and blanch in the boiling water for 3 minutes.
